A few years ago, my family started “Friday Night Movie Night”. Although some times when we could not find a family appropriate movie, we would play board games, load up on snacks and just have a great time spending the evening with each other. Those cherished times came as a result of my husbands extended unemployment which lasted for 2 1/2 years. The most important thing that resulted from his unemployment was that we had uninterrupted time with our kids. Although we faced some very lean times, we grew close as a family and even established a few traditions that we still keep today. One of those traditions is Friday Night Movie Night. My kids are older now and are starting to have social lives of their own. But whenever I announce that we’re having Friday night movie night, they still get excited. (ok, I’m exaggerating about the excitement part, but at this point, I take what I can get.)

Pizza 3 Ways
Pepperoni & Cheese(for the traditionalist)
Loaded Sausage and Pepperoni (loaded because its full of veggies)
Barbecue Chicken Pizza
1 cup Sweet Baby Rays Barbecue Sauce
1 cup Red Onion
2 cups mozzarella cheese
2 cups pre-cooked diced chicken breast
In a saute pan add a pat of butter and a teaspoon of olive oil. Heat until butter is melted and add diced chicken breast pieces. Cook until thoroughly heated through. Spread barbecue sauce over pizza dough and diced chicken breast. Add sliced red onion rings and mozzarella cheese. Bake at 450 degree until cheese is melted and bubbly.
Easy Peasy Pizza Crust– made in the bread machine no less.
4 cups Bread Flour
1 teaspoon sugar
1 teaspoon salt
1 1/2 cups water + more if dough is on the dry side
2 teaspoons olive oil
2 1/2 teaspoons instant yeast
Combine all of the ingredients according to your bread machine manufacturer instructions. Program bread machine to dough setting and press start. Once the cycle is complete, put dough in a bowl and cover with plastic wrap and let rest for 1 hour.
Preheat oven to 450 degrees. When ready to cook, lightly coat the bottom of the pizza pan with olive oil. Press dough into the pizza pan and lightly brush the edges of pizza crust with more olive oil. Decorate the pizza with the fixings of your choice. Bake on for 17-20 minutes until crust is golden brown and cheese is bubbly.
Wings & Things
Hot, Hot, Hot Buffalo Wings – This recipe can be adjusted depending upon your heat tolerance level
1-2 lbs of chicken wing sections
1 cup Butter
1 teaspoon seasoned salt
1 teaspoon pepper
1 cup Butter milk
1 1/2 cups Flour
1 cup Louisville Hot Sauce (to taste)
Rinse chicken pieces under cold water and pat dry. In a plastic disposable baggie, combine flour and seasoning salt and pepper. Pour buttermilk in shallow bowl. Dip each chicken piece into the buttermilk and shake off excess, then place in flour mixture to coat. Fry the chicken pieces until completely done.
Sticky Asian Wings
Here are the players in this hot and sticky saga:
1/2 c Rice Wine Vinegar
1/2 c Soy Sauce
1 cup Plum Sauce
1 teaspoon Louisville Hot Sauce (the hotter, the better baby!)
1 teaspoon Sriracha Chili Sauce
1/2 c Brown Sugar
2 tablespoons Ginger, minced
2 tablespoons Red Onion, minced
1 tablespoon Garlic, minced
1 teaspoon Red pepper flakes
2 teaspoons Sesame Seeds
In a saucepan add all the above ingredients except the sesame seeds. Cook on medium heat until boiling. Pour over all ready prepared chicken wings and toss with sesame seeds.
