This summer has been an unusually busy one for this Ravenous Kitchen momma. Normally, we would have had a least one trip to our favorite little beach in Michigan. But due to kids schedules, work and life’s little interruptions, we have not made it anywhere the entire summer so far. Since we can’t actually leave our domain, I decided to do a stay-cation at home and my nephew’s also decided to tag along. We have a lovely wooded back yard which makes for a fantastic site for a campout. We have camped out before, but usually it’s so sweltering hot and the mosquito’s are rampant, that our camp out ends up on our family room floor. But tonight, it is unusually cool and the stars are abundant. I like to keep things simple by grilling hot dogs and hamburgers and the usual fixings. Instead of same old S’mores, (say that twice) I decided to shake things up a little and make Chocolate Chunk S’mores and they were a hit!!
Remember, making memories is really what it’s all about. Whether it’s on the white sandy beaches of Cancun or the comfort of our own backyard, all that matters is that you are together as a family. Years from now your kids won’t care where you vacationed but instead will have fond memories of the times you spent together. Your kid’s will love you for it!!
Chocolate Chunk S’mores
3/4 c Butter (softened)
2/3 c White Sugar
2/3 c Brown Sugar
2 c Flour
2 tsp Vanilla Extract
1 large egg yolk
1 large egg
1 1/4 tsp Baking Soda
1/2 tsp Salt
1 3/4 C Semi-Sweet Chocolate Chunks
1 package Marshmallow (large)
1 package Hershey Chocolate Bars
Preheat oven to 350 degrees F.
Line each cookie sheet with parchment paper to prevent sticking.
In an electric stand mixer bowl, cream butter and sugars together until creamy. Scrape down bowl. Add eggs, one at a time, carefully mixing eggs and each addition. Add vanilla extract
In separate bowl, whisk together flour, baking soda and salt.
Gradually add the flour mixture to the creamed mixture and beat just until combined. Scrape down the sides of the bowl as needed. Stir in chocolate chunks.
Form dough into balls, using 1/4 cup for each cookie. Place six balls of dough on each baking sheet. Gently flatten balls of dough into 2/ 1/2 in round. Bake cookies for about 7-9 minutes or until lightly golden brown in color. Do not overbake!!
Remove cookies from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool.
Roast marshmallows on stick over fire. While stick hot, place marshmallow and hershey chocolate square on one chocolate chunk cookie and place second cookie on top. Enjoy!!
